15-17 dates (pitted)
5-6 prunes
1/4c honey
1c of nuts (almonds, peanuts, cashews, etc – I used peanuts)
1c of GF oats (we used Bobs Red Mill)
1/2c shredded coconut
1/2 – 3/4c water
1/4c of additional add ins (dried fruit)
Pre-heat oven to 325
Grind oats and nuts together in food processor until crumbly
Add in dates, honey, prunes and coconut and add ins
Slowly add in water until thick batter forms.
Line 8×8 pan with parchment paper and grease. Spread mixture evenly in pan and bake 20-25 minutes or until firm. 25 minutes worked perfectly for us. I cut these small – into finger sized bars – Lovey Levin calls them candy bars!
Remove and allow to cool before cutting.
I modified this recipe. I added Prunes, Honey, changed up the nuts (it was originally just almonds) and added the add ins. I followed the original recipe the first time and they were dry and bland. This recipe was moist and delicious! A crowd pleaser all around!
